Hi, I’m a vegetarian transitioning into veganism, and I am struggling to find a satisfying and sufficient vegan breakfast. I am also a ultra runner, so I need around 30 grams of protein. 400-500 calories is my general target. I’ve tried several things including tofu scrambles and sweet potatoes, but those have left me hungry by 11, and I don’t get a lunch break until 1 30. I know protein power would be easiest, but I am uncomfortable with eating something so processed every day. Any ideas would be greatly appreciated. I already eat a vegan lunch, and around 4 vegan dinners a week, so this will be a big step forward in my vegan journey. Have a great day, Plant Power!
