Co-op unveils vegan Valentine’s menu for just £15 for two people

The last of the Valentine’s dine-in deals is finally here, and we’re finishing with an absolute corker.

Co-op has unveiled its Valentine’s menu, packed with vegan delights and some extra special fizz. Choose a starter, main, side, dessert and bottle for your dream night in.

To start you off, opt for the Irresistible Slow Roasted Tomato and Vegetable Tarts – a vegan pastry base topped with sundried tomato sauce and layered with peppers, courgettes and slow-roasted tomatoes, finished with basil and lemon zest.

For your main, choose the Irresistible Mediterranean Vegetable Pasta Bake featuring giant conchigolioni pasta shells in a tomato and vegetable ragu, finished with seasoned kale, sun blush tomato wedges and a vegan mozzarella Pangrattato.

On the side, choose from the Irresistible Thick Cut Chunky Chips – twice-cooked and ready for a third cook in the oven – or the Irresistible Pea Shoot and China Rose Salad for a lighter option.

For your chocolate fix, you can indulge in the Irresistible Dark Chocolate and Sour Cherry Brownie – rich and gooey (just like a brownie should be) with sour cherries, and coated with gold lustre and a dark chocolate drizzle.

And to wash it all down, choose from the Irresistible Rioja Crianza if you like things on the dark side, or the Irresistible Prosecco/Rosé Prosecco for a lighter fizz.

If you don’t drink alcohol, you can opt for one of Co-ops soft drink alternatives including Elderflower Presse, Lime and Mint Presse or Coke. If you do go for a soft drink instead, this brings your total down to just £12 for two.

Speaking in a statement sent to Vegan Food and Living, Breige Donaghy, Director of Delicious Food at Co-op told us:

“There’s often a lot of pressure to impress on Valentine’s Day so we have made our loved-up meal deal the best one yet, with easy-to-cook and prepare dishes from our delicious Irresistible range.

“We have also introduced a number of new lines to give plenty of choice to customers, and we’re really excited to extend our offer to include plant-based meal options for the first time to cater for the ever-growing number of vegans, vegetarians and flexitarians.”

Co-op’s vegan Valentine’s menu is available from the 10th-16th February in Co-op stores.
