Diet plan for muscle growth/weight gain



I just found out about this subreddit and I was wondering if anyone could help me with this.

So I became vegan about two years ago and didn't weigh myself until a month or so ago but I found out that I weighed less than I did before. I now weigh 125.7 pounds give or take and I'm 5'10". I started college recently and unfortunately most of the vegan food here is terrible for you and our dorms lack access to a stove or oven so I recently bought an air fryer and pressure cooker. I was wondering if anyone had any tips to help me with reaching my goal?
