Struggling with Satiety Even While Bulking : veganfitness

Hi everyone, I went plant based in January (plan to go fully vegan this month) and have been doing strength training for a couple months. I prepare almost all of my own meals and track religiously on MyFitnessPal, so I believe my numbers are accurate. I’m quite underweight and trying to eat at a 200-300 calorie surplus, which is around 2300-2400 calories per day.

My main issue is that I’m just so much more hungry than when I was getting 2000-2100 calories eating meat. I get plenty of fiber by eating some sort of legumes every meal, get at least 1g of protein per pound of bodyweight per day, and overall food volume I’d say is pretty high. Fat intake is a little low (and mostly comes from nuts) and I don’t get much sodium if that matters. I try to manage my hunger by drinking lots of water and intermittent fasting. Even so, I’ll eat an 800 calorie lunch and be hungry an hour later, and am thinking about my next meal all the time, which is not how I envisioned bulking to be. Anyone else experienced something like this?

On a separate note, foods like eggs, cottage cheese, and greek yogurt have been staples of my diet as high protein/fat snacks, but these will have to go. Any snack ideas to replace these? Already eating a lot of nuts, and besides that, I only have bread and oatmeal on hand.
