Hi all. I (34F) been vegan for 7 years. 2 years ago I started gaining weight uncontrollably since moving to Germany. I posted a while back on here about it, and based on the comments I decided to go to the doctor and see if there were any underlying medical issues. The tests came back great, the doctor said he rarely sees such good results and credited it to my vegan diet. My B12 and iron levels were great too. So I decided to quit my birth control pills, anxiety meds and try intermittent fasting. A couple weeks later, I gained 5 more pounds. I consider I eat pretty healthy. I struggle with exercise because I have a demanding and sedentary job, but I normally work out 3-4 times a week for at least 30 minutes, usually running or yoga, maybe some light weights (I used to do more but the extra weight has severely affected my mobility).
A normal day of eating for me looks like:
Oatmeal with PB2, fruits, a few walnuts and about 1 tbsp of maple syrup
Rice/quinoa and veggies, some tofu or beans/lentils
Soup/curry with tofu/beans and pasta/rice/quinoa
I will sometimes eat a snack in the afternoon like a PB & J sandwich or soy yogurt with fruit.
I have completely stopped ordering takeout and drinking alcohol and I’m still gaining.
What puzzles me is that whatever I do, it seems to have no effect on the weight gain, it just keeps going up regardless of what I eat.
Calorie counting is a bit too stressful for me since it requires me to measure everything out and I rarely do that more than a couple days. Which is why I’m trying IF because it feels simpler, although I hate it since I love breakfast and I’m usually quite hungry in the AM. But two weeks after in, I am still quickly gaining.
I am open to any suggestions as to what to do, particularly if you have struggled with a similar issue and there’s a program or whatever that helped you.
